Getting ready for a Super Bowl Party...

Here's a recipe that one of my friends requested I make for my Super Bowl Party tonight...they are always a hit.  The recipe is originally from Cottage Living magazine.

Oatmeal Cream Pies

1 1/4 c. butter
1 c. firmly packed brown sugar
1/2 c. granulated sugar
1 large egg
2 t. vanilla
1 1/2 c. all-purpose flour
1 t. baking soda
1/2 t. salt
1/4 t. ground cinnamon
3 c. uncooked quick cooking oats
Cream Filling (recipe follows)

1.  Preheat oven to 375
2. Beat butter and sugars at medium speed with an electric mixer until creamy.Add egg and vanilla, beating well.
3.  Lightly spoon flour into dry measuring cups, and level with a knife.  Combine flour and next 3 ingredients in a bowl, stirring well.  Add oats, stir well.  Add to butter mixture, stir until well blended.  Drop by rounded tablespoons 2 inches apart onto baking sheets lined with parchment paper.  Bake at 375 for 10 minutes.   Cool  on pan for 2-3 minutes, then remove to cooling rack to cool completely.
4.  Spread 1 T. Cream Filling over each bottom side of half of cookies.  Top with remaining cookies, right side up.

Cream Filling:

1/2. c. butter, softened
2 c. powdered sugar
1-2 T. whipping cream
1 t. vanilla

Combine all ingredients, beat until light and fluffy, scraping down sides of bowl as needed.

Makes 18 cookies
